Baba Ghanouj recipe

To make quarantine more bearable, from the Arab restaurant Beytna we are going to pass you a recipe for one of our best dishes: baba ghanouj !! It is a typical dish of Arab gastronomy full of flavor and very easy to make that will be delicious.

For this dish you need:

• 2 full-size eggplants
• 2 garlic cloves
• 2 large tablespoons of lemon juice
• ¼ tahini sauce
• 1/3 of virgin olive oil, and a little more with garlic to spread the eggplant
• 2 large tablespoons of parsley, to decorate
• ¾ salt, to taste
• ¼ small tablespoons of ground cumin
• A pinch of smoked paprika, to decorate

ELABORATION: Roast the aubergines. If you do not have a grill, what you can do to give it that flavor is to reduce the aubergines in half and roast them with the cut down so that it is a caramelized delight. EYE, because they are made faster, stay tuned so they don’t burn !! Using the paprika as a garnish also gives that touch of smoke.

Once the eggplants are done, take out their interior. You have to extract the moisture from the eggplant. Let the eggplant rest in a colander for a few minutes and then come back to release more moisture.

For the sauce, you have to add a lot of salt because the eggplant has a bitter flavor and thus it reduces somewhat.

Once seasoned, mix with the eggplant meat. Serving Suggestions: Hot or toasted pieces of pita, carrot sticks, bell pepper strips, cucumber slices, etc.
